VALOR NUTRITIVO DE ENSILADOS Y CALIDAD HIGIÉNICA DE ENSILADOS, PIENSOS Y LECHE EN EXPLOTACIONES DE VACUNO DE GALICIA

Abstract

En este trabajo se hace una descripción bastante detallada de la calidad higiénica de una muestra representativa de los ensilados, piensos y leche de las explotaciones de vacuno de Galicia. Durante tres años, se tomaron 243 muestras de ensilado de maíz, 234 de ensilado de hierba, 138 de concentrado y 140 de leche cruda, en 76 explotaciones. De cada silo grande se tomaron dos muestras, una favorable, en el centro del silo desechando la capa superior, y otra desfavorable, en el lateral incluyendo la parte superior. La calidad higiénica del ensilado fue inferior en las muestras desfavorables, peor compactadas y más próximas a la superficie, lo que prueba que es posible mejorar la calidad microbiológica mejorando las técnicas de compactación y sellado de los silos. No se detectó aflatoxina B1 en ninguna muestra de concentrado. Se detectó Escherichia coli en el 94 % de las muestras de leche, Listeria monocytogenes en el 3% y afatoxina M1 en una muestra, con una concentración de 29 ppt, inferior al límite legal. Sólo el 64 % de las muestras de leche mostraron buena calidad en cuanto al contenido en esporas de Clostridium tyrobutiricum.
