Estudio de los componentes que producen el carácter picante en pimiento

Abstract

En del Centro de Investigación y Tecnología Agroalimentaria (CITA) del Gobierno de Aragón se inició hace 4 años una línea de investigación para conocer más detalladamente cómo se produce el picante en el pimiento. El problema se está abordando de una forma multidisciplinar, siendo los objetivos principales los siguientes: 1. Desarrollo de técnicas de determinación de los capsicinoides, en colaboración con el Grupo de Fisiología de Estrés en Plantas, experto en tecnologías avanzadas de análisis, perteneciente a la Estación Experimental de Aula Dei (EEAD) del Consejo Superior de Investigaciones Científicas (CSIC). 2. Análisis genético de la síntesis de capsicinoides. 3. Análisis molecular de la síntesis de capsicinoides. Dentro de estos estudios se han comenzado a desarrollar nuevos métodos de determinación de los capsicinoides, mediante la colaboración entre el CITA y la EEAD, basados en la cromatografía líquida de alta resolución acoplada a la espectrometría de masas por tiempo de vuelo (HPLC-MS/TOF). En España se dispone de muy pocos aparatos de este tipo, que tienen una capacidad analítica muy elevada. Se ha puesto a punto un nuevo método para la detección de capsicina y dihidrocapsicina, consiguiendo sensibles mejoras en los límites de detección de estos compuestos en comparación con estudios anteriores.
