Abstract

El principal reto al que se enfrenta cualquier tratamiento de protección de la proteína de la dieta es conseguir las condiciones de procesado ideales para, por un lado, aumentar el contenido de PNDR hasta un punto que justifique el coste del tratamiento, y por otro, minimizar posibles efectos adversos tales como la pérdida de aminoácidos o la disminución de la digestibilidad intestinal de la proteína protegida.
