Abstract

La col lombarda contiene un colorante natural (antocianina), el cual puede ejercer de indicador de pH natural. En este taller se pretenden evaluar diferentes sustancias, para saber si son ácidas, básicas o neutras, dependiendo del color que adquieran, de forma rápida y visual. La col lombarda contiene un colorante natural (antocianina), que le aporta su color morado característico. Al aislar esta sustancia de la col (mediante extracción con alcohol o ebullición) esta puede ser usado para medir el pH de diferentes sustancias cotidianas, ya que reacciona rápidamente con las mismas, cambiando su color, dependiendo de la acidez o basicidad que presenten. De esta forma, la col lombarda puede ser usada como un indicador del pH, que nos muestra si una sustancia es ácida, básica o neutra. Este experimento es simple de realizar, y la comprobación con diferentes sustancias también es fácil y rápida de analizar, al depender solo del color que adquieran las disoluciones que se quieran evaluar. Esta actividad es apta para todos los públicos, desde menores en edad escolar (infantil, primaria o ESO) hasta personas mayores de 65 años.
