Sabe como huele... o no

Abstract

El término japonés “umami”, significa sabroso. No es ni dulce, ni ácido, ni amargo, ni salado. El sabor “umami” lo identificó en el año 1908 el científico Kikunae Ikeda, profesor de la Universidad Imperial de Tokio, que lo asoció con una molécula llamada glutamato monosódico que es una sal responsable del sabor delicioso del caldo del alga marina kombu que se consume mucho en el noreste de Asia. Con Inmaculada Yruela hablamos de los sentidos en la alimentación, concretamente del gusto y el olfato. Además conocemos la historia de Rupert Johnston. Él tocaba la trompa pero un accidente del coche le dejó dependiente para toda su vida. Necesita ayuda para todo salvo para una cosa: tocar su instrumento. Escuchamos a Samaniego, Debussy, Yoshimatsu, Rimsky-Korsakov, Mozart y Williams.
