Los genomas de las plantas que nos comemos

Abstract

El genoma es la suma del material genético, la materia prima de la herencia, y está hecho fundamentalmente de ADN empaquetado con proteínas. En los organismos diploides, como los seres humanos, hay dos copias en cada célula. En las plantas, además del genoma principal, que se encuentra dentro del núcleo repartido en varios cromosomas, hay otro dentro de los cloroplastos, dedicado a la fotosíntesis. Gracias a los avances de la biología molecular y la genómica, desde hace dos décadas tenemos a nuestro alcance tecnologías que permiten secuenciar estos genomas, es decir, descifrar la secuencia exacta de palabras escritas con el alfabeto universal de A, C, G y T. A simple vista, estas secuencias no nos dicen nada, pero con ayuda de la biología computacional y la bioinformática podemos interpretarlas.
