En condiciones de pastoreo, los animales pueden seleccionar entre especies botánicas y/o partes de la planta, de manera que la composición botánica y la calidad nutritiva de la dieta ingerida pueden diferir considerablemente respecto al pasto en oferta. Los mecanismos que rigen este comportamiento son parcialmente conocidos, existiendo varias teorías que tratan de explicarlo (Eufagia, Hedofagia, Aprendizaje y Asociación, Características morfofisiológicas) y que son analizadas son detalle en esta revisión. En el presente capítulo también se realiza un análisis comparativo de las diferentes técnicas empleadas para su estudio.
