Abstract

El trabajo de investigación presenta como objetivo general analizar la influencia de la producción en la competitividad de carne de cuy en el mercado de Abancay, que permita mejorar la comercialización, incrementando sus ventas y logrando un posicionamiento en el mercado de Abancay. A través de esta investigación se identificó las dificultades que existen en el proceso productivo de la carne de cuy en las diferentes Etapas para que pueda ser comercializado. El método que se utilizó a lo largo del proceso de investigación es el descriptivo – explorativo, el cual consiste en realizar una caracterización del fenómeno de investigación e ir más allá de tal acción para poder comprender el por qué suceden determinadas acciones. El resultado general obtenido muestra que la productividad en los distintos galpones es de 3 y 4 crías, el cual es mayor al parámetro promedio: 2.5 crías por madre, lo cual corrobora que existe un potencial bueno que trabajar. La variación que existe en los costos de producción entre los productores que fueron evaluados da un mínimo de S/.11.00 y un máximo de S/.15.00. En el caso de la rentabilidad que tiene esta actividad, es rentable debido a que los ingresos son mayores a los gastos, algunos productores están por debajo del porcentaje aceptado para considerar un negocio sostenible, como nos muestra en el cuadro de resultados, un mínimo de 17 por ciento de rentabilidad esto debido a las deficiencias que se tiene en el manejo técnico, también se tiene productores con una rentabilidad mayor al promedio como nos muestra en el cuadro de resultados, un máximo del 39 por ciento de rentabilidad, dichos productores tienen proyección de seguir incrementando su producción, a pesar de algunas deficiencias que se observó, el manejo que ellos realizan es más tecnificado.

This academic work has as a general objective to analyze the influence of the production on the competitiveness of guinea pig meat in the Abancay market, which allows to improve the commercialization, increasing its sales and achieving a positioning in the Abancay market. Through this investigation it was possible to identify the existence of difficulties in the process of production of guinea pig meat during all the stages so that it can be commercialized. The method that was used throughout the research process is the descriptive - exploratory, which consists in carrying out a characterization of the research phenomenon and going beyond such an action to be able to understand why certain actions occur. The general result obtained is that the productivity in the different sheds comprises that it is 3 or 4 offspring, which is higher than the average parameter: 2.5 offspring per mother, which confirms that there is a good potential to work. The variation that exists in the production costs among the producers that were evaluated gives a minimum of S / .11.00 and a maximum of S / .15.00. In the case of the profitability of this activity, it is profitable because the income is greater than the expenses, some producers are below the accepted percentage to consider a sustainable business, as shown in the results table, a minimum of 17 percent profitability this due to the deficiencies in technical management, there are also producers with a higher than average profitability as shown in the results table, a maximum of 39 percent profitability, these producers have a projection to continue increasing their production, despite some deficiencies we could observe, the management they perform is more technician.
