Abstract

OBJETIVO: realizar una revisión bibliográfica de las pérdidas, desperdicios y desechos alimenticios (PDDA) que se producen a lo largo de la cadena alimenticia. MATERIAL Y MÉTODO: se consultaron artículos completos, directrices, tesis y boletines de organismos internacionales publicados en los últimos diez años, que se obtuvieron a través de los motores de búsqueda como Google, Google Académico y Sciencedirect. RESULTADOS: en el mundo el 30% de los alimentos que se producen, se pierden o desperdician. Argentina representa el 12,5% de la producción total, donde los residuos que se generan a partir del procesamiento de frutas y verduras son similares e incluso superiores al promedio mundial (45%); y aproximadamente el 80% se registra en las etapas de producción, postcosecha y procesamiento. CONCLUSIONES: la PDDA aumenta la inseguridad alimentaria y hace un mal uso de los escasos recursos naturales y financieros. Para hacer frente a esta situación, es necesario el compromiso de todos los actores involucrados, desde los productores, mediante cultivos y producciones sustentables, hasta los consumidores, con prácticas de consumo responsable y de los gobiernos, con la aplicación de políticas, normativas y reglamentaciones que contribuyan a la causa.

OBJECTIVE: to carry out a bibliographic review of food losses, waste and waste (PDDA) that occur throughout the food chain. MATERIAL AND METHOD: complete articles, guidelines, theses and bulletins of international organizations published in the last ten years were consulted, which were obtained through search engines such as Google, Google Scholar and Sciencedirect. RESULTS: 30% of the food that is produced in the world is lost or wasted. Argentina represents 12.5% of the total production, where the residues generated from the processing of fruits and vegetables are similar and even higher than the world average (45%); and approximately 80% is recorded in the production, post-harvest and processing stages. CONCLUSIONS: PDDA increases food insecurity and misuses scarce natural and financial resources. To deal with this situation, the commitment of all the actors involved is necessary, from the producers, through sustainable crops and production, to the consumers, with responsible consumption practices, and from the governments, with the application of policies, norms and regulations. to contribute to the cause.
