Abstract

En la industria agro-alimentaria el envasado posee un rol importante a la hora de la conservación de los alimentos. Es importante que estos envases estén compuestos con materiales compatibles con el alimento en sí, y que sea capaz de conservar y proteger sus propiedades. No obstante, en los últimos años, hay una creciente preocupación acerca de los posibles procesos de migración y transferencia que pueden experimentar dichos materiales hacia el alimento. Estos contaminantes, de preocupación emergente han demostrado ser perjudiciales para la salud humana, es por ello que su monitorización ha tenido un creciente interés en los últimos años dentro de la Química Analítica.Este trabajo de fin de grado recoge una revisión y discusión de la bibliografía reportada en distintas bases de datos, sobre las principales técnicas microextractivas para el análisis de contaminantes procedentes del empaquetado en alimentos. Se han incluido técnicas basadas tanto en fase sólida como en fase líquida, así como las técnicas instrumentales más empleadas, siendo estas, cromatografía de gases y cromatografía líquida, ambas acopladas a espectrometría de masas.

Packaging plays an important role in food preserving. In agro-food industry, it is important to select the material ofthose packaging. These container materials must be compatible with the food, and that it is capable of preserving and protecting its properties. Nowadays, there are an increasing concern about the possible processes of migration and transfer that these materials may undergo into the food. These contaminants, with emerging concern, have proven to be harmful to human health. This reason, increase the concern about its monitoring in recent years in Analytical Chemistry field.This end-of-degree project includes a revision and discussion of the literature reported in different databases, on the main microextractive techniques for the analysis of contaminants from food packaging.Techniques based on both, solid and liquid phase have been included, as well as the most used instrumental techniques, these being gas and liquid chromatography coupled to mass spectrometry
