Abstract

Desde hace mucho tiempo se sabe que alimentos habitualmente seguros para la mayoría de la población en ocasiones pueden ser los responsables de reacciones adversas en algunos individuos. Hipócrates, hace más de 2.000 años, describió que la leche de vaca podía causar alteraciones cutáneas y digestivas. Las primeras descripciones de reacciones anafilácticas a alimentos como huevo y pescado se remontan a los siglos XVI y XVII, pero la comunidad médica ha sido muy incrédula en estudiar e investigar las reacciones adversas derivadas de la ingestión de alimentos. Durante mucho tiempo, enfermedades y síntomas inespecíficos han sido etiquetados como alergia, lo que ha creado una gran confusión sobre el tema. A inicios del siglo XX, Preusnitz y Küstner hicieron un gran aporte al conocimiento de las enfermedades alérgicas, al demostrar que la sustancia responsable de la reacción alérgica a pescado que sufria Kústner estaba presente en su suero y podía transferirse a un individuo sano que no era sensible al pescado.
