Aceites vegetales, hacia una producción sostenible

Abstract

Los procesos productivos emplea¬dos actualmente para la obtención de aceites vegetales implican fuertes agresiones al medio ambiente, fundamentalmente dadas por la emisión de solventes orgánicos a la atmósfera, siendo el más empleado en esta industria el hexano, reconocido contaminante atmosférico. El objetivo de este artículo es analizar la alternativa que brinda la tecnología de Extracción Acuosa del Aceite Asistida por Enzimas como una posible solución al problema medioambiental descrito. Para dar cumplimento a este propósito, se caracterizan de forma general los aceites vegetales desde el punto de vista químico y nutricional, así como la industria productora, las materias primas empleadas, las tendencias de mercado y el problema medioambiental que significa. Así mismo, se describe el método de extracción enzimática desde las experiencias que existen a escala de laboratorio, las materias primas fundamentales, las variables del proceso identificadas y los resultados de calidad obtenidos, así como también las ventajas y desventajas que este entraña. El análisis realizado permite concluir que el proceso es tecnológicamente viable, aun cuando implica un camino por recorrer en la búsqueda de rentabilidad.
