Abstract

O presente trabalho tem por base o estágio realizado numa grande cadeia de retalho – Continente Modelo de Ermesinde, que decorreu no período de 12 de fevereiro de 2018 até 30 de junho de 2018. Encontra-se dividido em duas partes, sendo a primeira referente ao relatório de estágio e a segunda ao projeto complementar/tese. Relativamente à primeira parte, contém um relatório detalhado de todo o percurso durante o estágio, incidindo nas atividades realizadas no âmbito do sistema de autocontrolo implementado na secção de frescos do local de estágio, assim como temáticas inerentes ao processo de autocontrolo, nomeadamente controlo de rastreabilidade e elaboração de auditorias. Na segunda parte, estará descrito um projeto complementar realizado de forma concomitante ao estágio, e que consiste na identificação e estudo das não conformidades (NC) mais recorrentes no estabelecimento, na criação de medidas corretivas e na avaliação da sua eficácia. Neste estudo, verificou-se que as NC mais recorrentes estavam relacionadas com os expositores dos produtos. Mediante posterior avaliação, determinou-se que as medidas implementadas foram eficazes, o que conduziu à diminuição de ocorrência das NC presentes no estabelecimento.

The present work is based on the internship carried out in a large retail chain - Continente Modelo de Ermesinde, which took place from February 12, 2018 to June 30, 2018. It is divided into two parts, the first one referring to the internship’s report and the second to the complementary project/thesis. The first part contains a detailed report of the whole course during the internship, focusing on the activities carried out under the self-control system implemented in the fresh section of the internship’s site, as well as the inherent aspects of the self-control process, namely control of traceability and auditing. In the second part, a complementary and concomitant to the internship project will be described. This project consists in the identification and study of the most recurrent nonconformities in the establishment, the creation of corrective measures and the evaluation of their effectiveness. In this study, it was verified that the most recurrent nonconformities were related to the products displays. Through later evaluation, it was determined that the measures implemented were effective, which led to a decrease in the occurrence of the nonconformities present in the establishment.
