Enzimas lactasas fúngica y bacteriana para elaborar manjar deslactosado de leche de cabra

Abstract

La intolerancia a la lactosa es un problema común que limita el consumo de productos lácteos. Este estudio evalúa la aplicación de dos enzimas lactasas, una fúngica (Kluyveromices lactis) y otra bacteriana (Bifidobacterium bifidum), para hidrolizar la lactosa en leche de cabra y desarrollar un manjar deslactosado. Se comparó la eficiencia de las enzimas a diferentes temperaturas y concentraciones, logrando una hidrólisis cercana al 100% a 35°C en 60 minutos. El manjar elaborado con leche de cabra deslactosada cumplió con los estándares de calidad y mostró buena aceptación sensorial. Este producto innovador amplía las opciones para personas intolerantes a la lactosa y promueve el aprovechamiento de la leche de cabra. Se recomienda continuar investigando las aplicaciones de estas enzimas en otros productos lácteos deslactosados, aprovechando las ventajas nutricionales y tecnológicas de la leche de cabra.
