Abstract

El objetivo de este estudio fue evaluar efecto del frío en el sistema enzimático antisenescencia catalasa (EC. 1.11.1.6; CAT)- superóxido dismutasa (EC. 1.15.1.1; SOD) de frutos de pitahaya (Hylocereus undatus) durante el almacenamiento con frío y temperatura ambiente. Lotes de frutos, cosechados en Tehuacán, Puebla, fueron almacenados cuatro días a 22±1 °C, y a 3, 7 y 11±1 °C durante 7, 14 y 21 días, y cuatro días a 22±1 °C al concluir cada período de frigoalmacenamiento. Se determinó la actividad CAT y SOD en la pulpa de los frutos de 20 tratamientos que incluyó un testigo sin almacenamiento. Cuatro días de almacenamiento a 22±1 °C no modificaron la actividad CAT o SOD (18.75 y 3.25 U·g-1, respectivamente), respecto al testigo. El almacenamiento con frío disminuyó significativamente la actividad CAT, respecto al testigo. La inhibición de la actividad CAT no mostró una tendencia dependiente de la temperatura o tiempo de almacenamiento con frío; pero la inhibición media en los frutos almacenados a 11±1 °C (13.07 U·g-1) fue ligeramente menor a la alcanzada con el almacenamiento a 3 y 7±1 °C (12.39 U·g-1). La inhibición de la actividad CAT fue revertida parcial o totalmente con el almacenamiento a 22±1 °C por cuatro días después del frigoalmacenamiento. La actividad SOD no se afectó significativamente con el frío y, en general, fue incrementada con el almacenamiento a 22±1 °C, complementario al frigoalmacenamiento. En respuesta al almacenamiento con frío, la actividad CAT es inhibida, pero SOD, que apoya la disminución de los síntomas de senescencia, generados por el estrés oxidativo, se activa en los frutos de pitahaya.
