Abstract

Ces dernières années, l'accent a été mis sur les aliments bénéfiques contenant des micro-organismes probiotiques et des substances organiques fonctionnelles. Dans ce contexte, l'utilisation commerciale du kéfir suscite un intérêt croissant, car il peut être commercialisé comme une boisson naturelle contenant des bactéries bénéfiques pour la santé. Il existe de nombreux produits à base de kéfir disponibles dans le commerce. Le kéfir peut agir comme une matrice dans l'administration efficace de micro-organismes probiotiques dans différents types de produits. De plus, la présence d'exopolysaccharides du kéfir, connus sous le nom de kéfiran, qui ont une activité biologique, ajoute certainement de la valeur aux produits. Le kéfiran peut également être utilisé séparément dans d'autres produits alimentaires et comme film de revêtement pour divers produits alimentaires et pharmaceutiques. Cet article vise à mettre à jour les informations sur le kéfir et sa composition microbiologique, l'activité biologique de la microflore du kéfir et l'importance du kéfiran en tant que substance bénéfique pour la santé.

En los últimos años, ha habido un fuerte enfoque en alimentos beneficiosos con microorganismos probióticos y sustancias orgánicas funcionales. En este contexto, existe un creciente interés en el uso comercial del kéfir, ya que se puede comercializar como una bebida natural que tiene bacterias promotoras de la salud. Hay numerosos productos a base de kéfir disponibles comercialmente. El kéfir puede actuar como una matriz en la entrega efectiva de microorganismos probióticos en diferentes tipos de productos. Además, la presencia de exopolisacáridos de kéfir, conocidos como kefiran, que tienen actividad biológica, sin duda añade valor a los productos. Kefiran también se puede usar por separado en otros productos alimenticios y como película de recubrimiento para diversos productos alimenticios y farmacéuticos. Este artículo tiene como objetivo actualizar la información sobre el kéfir y su composición microbiológica, la actividad biológica de la microflora del kéfir y la importancia del kéfiran como sustancia beneficiosa para la salud.

In recent years, there has been a strong focus on beneficial foods with probiotic microorganisms and functional organic substances. In this context, there is an increasing interest in the commercial use of kefir, since it can be marketed as a natural beverage that has health promoting bacteria. There are numerous commercially available kefir based-products. Kefir may act as a matrix in the effective delivery of probiotic microorganisms in different types of products. Also, the presence of kefir's exopolysaccharides, known as kefiran, which has biological activity, certainly adds value to products. Kefiran can also be used separately in other food products and as a coating film for various food and pharmaceutical products. This article aims to update the information about kefir and its microbiological composition, biological activity of the kefir's microflora and the importance of kefiran as a beneficial health substance.
