Abstract

A qualidade na indústria de alimentos vem se destacando na economia global em virtude de dois fatores: as exigências legais das importações, legislação de programas federais e estaduais e devido ao aumento das exigências por parte dos consumidores. As barreiras impostas pelos mercados em relação à sanidade dos produtos e o aumento de surtos de doenças transmitidas por alimentos devido consumo de alimentos contaminados são fatores que fazem com que empresas do ramo alimentício preocupem-se com a produção de alimentos seguros e o padrão de qualidade do produto. a obra trás uma didática impar no processo da produção de alimentos por meio da indústria, e orienta quantos cuidados e problemas que podem ocorrer caso não se tenha segurança nem controle no processo produtivo.
