
Abstract. The amylopectin isolated from modified Talas Beneng starch (Xanthosoma Undipes K. Koch). The purpose of this study was to improve the characteristics of amylopectin to requirements of SNI.3451:2011. Modification of starch was carried out by acid hydrolysis method, Amylopectin isolation was carried out using heating. The results of the characterization of modified starch that meet the requirements of SNI 3451:2011 and include fine powder, no foreign matter, 37.32% solubility. water content 11.73%. total ash content 0.453%, acid insoluble ash content 0.53%, pH 6.32; Metal contaminants include lead < 0.059 mg/kg, cadmium <0.012 mg/kg, lead < 2.05 mg/kg, mercury <0.005 mg/kg, and arsenic contamination < 0.003 mg/kg. Results Characteristics of amylopectin that meet the requirements of SNI.3451:2011 include fine powder, no foreign matter, 39.84% solubility. water content 11.49%. total ash content 0.064%, and pH 6.84. Abstrak. Amilopektin diisolasi dari pati talas beneng termodifikasi (Xanthosoma undipes k. Koch). Tujuan penulisan ini untuk memperbaiki karakteristik amilopektin sehingga memenuhi syarat SNI.3451:2011. Modifikasi pati dilakukan dengan metode hidrolisis asam, isolasi amilopektin dilakukan menggunakan cara pemanasan. Hasil karakterisasi pati termodifikasi yang memenuhi syarat dari SNI 3451:2011 dan meliputi serbuk halus, tidak terdapat benda asing, kelarutan 37,32%. Kadar air 11,73%. Kadar abu total 0,453%, kadar abu tidak larut asam 0.53%, ph 6.32; cemaran logam meliputi timbal < 0.059 mg/kg, kadmium <0.012 mg/kg, timah < 2,05 mg/kg, raksa <0.005 mg/kg, dan cemaran arsen < 0.003 mg/kg. Hasil karakteristik amilopektin yang memenuhi syarat dari SNI.3451:2011 meliputi serbuk halus, tidak terdapat benda asing, kelarutan 39,84%. Kadar air 11,49%. Kadar abu total 0,064%, dan pH 6,84.
