Abstract

El estudio se efectuó en el distrito de Santa Rosa, en el departamento de Amazonas, teniendo como objetivo principal obtener prototipos panela granulada utilizando saborizantes y colorantes naturales. Se inició con la selección de colorantes y saborizantes en el ámbito nacional, seleccionando tres colorantes y tres saborizantes compatibles con la producción de panela. Los ensayos fueron montados bajo un Diseño en Bloques Completamente al azar (DBCA) con arreglo factorial 3Ax3B por cada ensayo, es decir ensayo 1: color chicha - sabor chicha, ensayo 2: color naranja - sabor naranja y ensayo 3: color limón - sabor limón. A partir de estos ensayos se obtuvieron muestras de panela, los mismos que fueron sometidas a análisis físico químico, sensorial y microbiológico. Los tratamientos por cada ensayo fueron validados y a partir de estos se obtuvieron tres mejores tratamientos, es decir un mejor tratamiento del ensayo 01: T1 (0.8% de saborizante y 0.010% de colorantes), un mejor tratamiento del ensayo 02: T1 (0.8% de saborizante y 0.010% de colorantes) y un mejor tratamiento del ensayo 03: T1 (0.9% de saborizante y 0.015% de colorantes).
