Abstract

ice cream control. There is no question but what such are needed but it is certainly unseemly, to say the least, to purport to control the final product when the quality of the raw material is ignored. Effective control of cream quality must be the foundation from which satisfactory ice cream control may be instituted. We follow the procedure and apply the lessons which the sanitary control of our milk supply has taught us to be necessary.
