Abstract

En nuestro país a nivel de hatos lecheros (fincas) existe la falta de conocimiento<br />de una técnica de manejo y conservación del recurso lácteo lo cual lleva a una disminución de su calidad, por la contaminación, debido al tiempo que transcurre desde el momento del ordeño hasta su comercialización, ya sea directamente al consumidor o a las plantas procesadoras, que en la gran mayoría de los casos se mantiene a la temperatura ambiente en un periodo aproximado de doce a dieciséis horas, lapso en el cual se realiza la división celular y la acción microbiana, produciendo su acidificación.
