AVIDIN has been shown to bind the vitamin biotin, but the mechanism of binding is still unknown. Modification of the avidin molecule by acetylation, esterifieation or by blocking the amide, guanidyl, imidazole and phenolic groups did not result in a loss of its ability to bind biotin1.
