THE cow is the main animal for milk production in the world. In Africa, Asia and some parts of Europe, the buffalo is used as well as the cow to provide milk for human consumption. In Egypt, the statistics of the Ministry of Agriculture in 1937 record 956,036 buffaloes compared with 983,219 cows. The average composition of cow's and buffalo's milk in Egypt, as a result of a series of analyses of milk given by the Faculty of Agriculture herd for two consecutive years, was found to be as follows :
