СПЕКТРОФОТОМЕТРИЧЕСКАЯ ОЦЕНКА ЖЕЛЕЗОВОССТАНАВЛИВАЮЩЕЙ СПОСОБНОСТИ РАСТВОРИМОГО КОФЕ

Abstract
Обсуждены способы определения антиоксидантной активности пищевых продуктов с использованием различных индикаторных систем. Спектрофотометрическим методом с использованием индикаторной системы Fe(III)–o-Phen проведено изучение железовосстанавливающей способности (ЖВС) кофе и индивидуальных компонентов фенольной природы, входящих в его состав – хлорогеновой (ХГК), кофейной (КК), феруловой (ФК), галловой (ГК), ванилиновой (ВК), протокатеховой (ПКК), мочевой (МК) кислот, кверцетина (КВ) и катехола (КТ). Установлено, что чувствительность определения индивидуальных антиоксидантов снижается в ряду КВ > ГК > ПКК ≈ ХГК > КК > КТ ≈ МК > ФК > ВК. Проведены выбор условий оп...
