Abstract
The starting point for the development of a continuous process producing 1,3-Oleyl-2-palmitoylglyceol, done in this thesis, was the thesis of Schmid [Schmid 1999]. She developed a lipase-catalyzed two-step reaction system for the synthesis of a structured triglyceride of the type ABA [European Patent Application: EP 0 882 797 A2]. The first reaction step of this transesterification can be described by a sequential reaction of Tripalmitin producing 2-Monopalmitin via 1,2-Dipalmitin.
