KARAKTERISTIK MUTU MARGARIN DENGAN PENCAMPURAN LEMAK KAKAO DAN MINYAK VCO (Virgin Coconut Oil)

Abstract

Penelitian ini bertujuan mengetahui pengaruh pencampuran lemak kakao dan minyak VCO terhadap karakteristik mutu margarin serta pada perbandingan konsentrasi berapa pencampuran lemak kakao dan minyak VCO yang memiliki nilai organoleptik tertinggi. Penelitian ini telah dilakukan di Laboratorium Teknologi Hasil Pertanian Universitas Andalas pada bulan Desember 2013 sampai Februari 2014. Proses pembuatan margarin melalui tahapan persiapan lemak kakao dan pengolahan VCO kemudian dilakukan pengamatan fisik, analisis kimia dan organoleptik. Penelitian menggunakan Rancangan Acak Lengkap (RAL) yang terdiri dari 5 perlakuan dan 3 kali ulangan. Data dianalisis secara statistika dengan menggunakan ANOVA dan jika berbeda nyata, dilanjutkan dengan uji Duncan’s New Multiple Range Test (DNMRT) pada taraf nyata 5% dengan perlakuan: A (60 g lemak kakao : 40 g minyak VCO), B (65 g lemak kakao : 35 g minyak VCO), C (70 g lemak kakao : 30 g minyak VCO), D (75 g lemak kakao : 25 g minyak VCO) dan E (80 g lemak kakao : 20 g minyak VCO). Pengamatan pada produk margarin meliputi analisis fisik, kimia dan mikrobiologi. Hasil penelitian menunjukkan bahwa pencampuran lemak kakao dan minyak VCO berpengaruh nyata terhadap stabilitas emulsi, daya oles, titik leleh produk, tetapi tidak berpengaruh nyata terhadap kadar air, kadar lemak dan bilangan asam. Hasil uji organoleptik menunjukkan perlakuan C sebagai produk yang paling disukai dengan persentase panelis yang memilih suka sampai sangat suka sebesar 70-95%, karakteristik perlakuan C adalah stabilitas emulsi 87%, titik leleh 32,750C, daya oles 95,33 N/cm2, kadar air 13,58%, kadar lemak 84,62%, bilangan asam 2,95 mg NaOH/g, dan angka lempeng total (ALT) 3,4x102 cfu/g.
