
Для решения задачи внутреннего массопереноса при нагреве картофеля электромагнитной энергией (ЭМЭ) поля СВЧ экспериментально получена кинетика процесса удаления влаги, характеризующая влиние оболочки (кожуры) на продолжительность процесса и потери массы картофеля. Показано на фотографиях распределение влаги под действием гравитационной силы.To solve a problem of inner mass-transfer when potato is heated by electromagnetic energy of SHF field the kinetics of moisture removal was experimentally obtained. It characterized the influence of membrane (peel) on the process period and potato mass loss. The photos show distribution of moisture under gravity.
