Abstract

Описаны изменения молекулярных параметров глицинина, запасного 11S глобулина семян сои Glycine max, в результате ограниченного протеолиза папаином. Mетодами лазерного статического и динамического светорассеяния, малоуглового рентгеновского рассеяния и скоростной седиментации показано снижение при ограниченном протеолизе молекулярной массы, гидродинамического размера, радиуса инерции, поверхностного заряда и степени асимметрии молекулы глицинина, а также увеличение уровня гидрофобности ее поверхности. Установленные изменения молекулярных параметров глицинина в основном согласуются с ранее показанными изменениями первичной структуры его субъединиц при ограниченном протеолизе папаином.

Alterations of molecular parameters of glycinin, soybean storage 11S globulin, generated by papain limited proteolysis have been described. The decrease of molecular mass, hydrodynamic radius, radius of gyration, surface charge and asymmetry of glycinin molecule as well as the increase of its surface hydrophobicity were shown using the methods of laser static and dynamic light scattering, small angle X-ray scattering and a high-speed sedimentation. In general, the described alterations of glycinin molecular parameters coincide with those of its subunit primary structure previously found occurring during limited proteolysis by papain.
