Enriquecimiento de panes sin gluten con (1-3)(1-6) Betaglucanos

Abstract

La enfermedad celíaca es un trastorno genético que afecta a aproximadamente el 2% de la población, y un problema que enfrentan las personas que la padecen es encontrar alimentos con buena calidad nutricional y organoléptica adaptados a su dieta exenta de gluten. El pan es un producto adecuado para mejorar su calidad nutricional, ya que es un alimento básico de la alimentación, y su calidad suele verse afectada con la ausencia del gluten. Por ello, en este estudio se trabajó con tres β-glucanos del tipo (1-3)(1-6) (dos derivados de levadura y uno de hongo) incorporados en cuatro dosis (0%, 0,5%, 1% y 2%) a masas y a panes. El trabajo se realizó sobre su efecto en masas a hidratación constante, y en panes sin gluten con hidratación adaptada. Los β-glucanos mostraron comportamientos diferentes, siendo SBG el que mostró un comportamiento más parecido al control, mientras que los β-glucanos insolubles mostraron mayores diferencias. La incorporación de todos ellos generó masas más consistentes. La adición de β-glucanos representó un aumento del volumen específico de los panes, una disminución de su dureza, y unos panes más claros. Se observó en los panes con BG una disminución en su dureza en su envejecimiento.
