Abstract

La filiera alimentare è una delle più importanti del ‘Made in Italy’ ed è un settore nel quale l’impiego di tecnologie innovative potrebbe assicurare una maggiore qualità del prodotto. Tecniche non distruttive, applicabili in situ, poco dispendiose e real time come l’analisi attraverso il naso elettronico e la spettroscopia ottica e laser affiancate da metodi chimico-fisici, sono state utilizzate nei laboratori dell’ENEA durante attività di ricerca nell’ambito di progetti Nazionali (bandi INDUSTRIA 2015), al fine di monitorare indici di qualità di matrici ortofrutticole, in vista di una loro possibile applicazione a livello industriale. Nel presente studio le tecniche sopracitate sono state provate in differenti condizioni operative per determinarne la complementarietà consentendo di fornire protocolli integrati e sistemi di immediata applicazione per la filiera alimentare.

The food supply chain, among the most important ‘Made in Italy’ sectors, would greatly benefit of innovative technologies that in turn could ensure a higher quality of products. Non-destructive, in situ, low cost and real-time techniques such as electronic sensing technologies and optical and laser spectroscopy, coupled with chemical-physical methods, have been adopted and verified at ENEA laboratories within the research activities of National projects (INDUSTRIA 2015 calls), dedicated to monitor the quality indexes of fruit and vegetable matrixes, in view of possible applications at industrial level. Within the studies different operating conditions were tested to determine the complementarity of the above mentioned techniques, allowing the identification of the most effective protocols of immediate interest to the food chain.
