Risikovurdering af morgenmadscerealier

Abstract

DTU Fødevareinstituttet er af Fødevarestyrelsen, Kemi og Fødevarekvalitet, blevet bedt om at foretage en risikovurdering af tilsætningen af folsyre (198 μg per 100 g) og jern (8,4 mg per 100 g) til morgenmadscerealier. Fødevarestyrelsen ønsker, at beregningerne skal foretages ud fra følgende forhold:•DTU bedes tage udgangspunkt i et gennemsnitligt indtag af morgenmadscerealier pr. dag for 95. percentilen.-DTU bedes oplyse mængden (g) af dette indtag for alle aldersgrupper.-DTU bedes i vurderingen også oplyse selve indtagsmængden af næringsstoffer fra produktet (95. percentilen), som vurderingen tager udgangspunkt i, for alle aldersgrupper.•Det skal antages, at den pågældende fødevare erstatter indtaget af lignende produkter i kosten (morgenmadscerealier). Der skal benyttes 50. percentilen for indtag af næringsstoffer fra baggrundskosten.-DTU bedes oplyse indtagsmængden af næringsstoffer fra baggrundkosten for alle aldersgrupper.DTU bedes medtage alle aldersgrupper i vurderingen.
